Wagyu Pie Recipe (Serves 4)
For the Filling:
• 500g Wagyu beef, diced and dusted with flour
• 1 carrot, finely diced
• 2 celery stalks, finely diced
• 3 small onions, finely chopped
• 3 cloves of garlic, minced
• 3 bay leaves
• Small bunch of thyme
• 1 tablespoon tomato paste
• 1 tablespoon horseradish
• 1 tablespoon wholegrain mustard
• 70ml Worcestershire sauce
• 1 small can of beer (about 330ml)
• 500ml beef stock
For the Pastry:
• Shortcrust pastry (for the base)
• Puff pastry (for the top)
Method
1. Sear the Beef:
Heat a drizzle of oil in a pot. Lightly dust the diced Wagyu beef with flour, then fry in batches until golden brown. Lay the seared beef in a tray and set aside.
2. Cook the Veggies:
Without washing the pot, add the diced carrot, celery, onions, and garlic straight in. Sauté for 3–4 minutes until softened and fragrant.
3. Build the Base:
Return the beef to the pot and stir in the tomato paste, wholegrain mustard, horseradish, thyme, bay leaves, and Worcestershire sauce. Mix well to coat everything.
4. Add Liquids:
Pour in the beer and beef stock. Stir to combine and bring to a simmer. Cook on low heat for 2.5 hours, or until the mixture is rich, thick, and full of flavour.
5. Prepare the Shortcrust Pastry Base:
Cut 4 strips of shortcrust pastry and lay them in individual pie moulds. Line with a cartouche (baking paper) and fill with rice or baking beans. Bake in the air fryer at 160°C for 15 minutes. Remove the cartouche and bake for a further 2 minutes at 160°C to crisp up.
6. Assemble the Pies:
Once the beef mix is ready, fill each pastry case with the mixture. Cut rings of puff pastry to match the size of the tart moulds and lay them on top. Brush with egg wash, poke a small hole in the centre, and bake in the air fryer at 160°C for 20 minutes until golden and puffed.
7. Serve:
Plate up with creamy mashed potatoes and vibrant peas for the ultimate comfort food experience. Sexy and satisfying! 🥧✨
